This is my personal favorite soup and the one my mother made the most as it was simple. The ingredients were almost always available in the pantry, as well as it was quick to make. The broth without paprika is insipid. I call this “paprika vegetable” as it’s no ordinary vegetable soup. It can be…
Beans & Hungarian Kolbasz
I don’t think a Hungarian could live without Kolbasz. The soft, smoke cured, heavily seasoned with paprika, links of sausage originally created in the town of Gyula. Gyulai Kolbasz is the national sausage I think. I know it was what my refugee parents missed as I was growing up. After we settled down and had…
Egg Salad Sandwich with roasted red peppers
I made some new traditional meals this week. Stuffed cabbage two ways; the Polish way with tomato, and the way my Mother made it with just a little roux thickening the broth. Two different white bean stew/soups. Three different creamed noodle dishes, one with spinach and with mushrooms. and orzo with chicken and mushrooms. It’s quite…
Mushroom Paprikas’ with buttered parsley rice
Trying to find the balance between taking too much and too little. I had made enough to cover lunch and dinner, so not all of it was eaten. I have to work on labeling and packaging, I’m getting there. Labels either don’t stick or stick too well and I can’t get them off the containers….
Dis is da food I grown up vid…
Anu, It’s the same food I grew up with too. You made it for us. But you make it better! You just miss our good Hungarian food. Ah, fehér bab (white beans) , my faader favorite. He liked it with smoked meat in it. My grandmother made it for him.At dinner he would dish out…
Menu October 20 week for the Aging-Elderly
There is a couple of reasons for the menu.
First, Studying food choices will interest her and make her think about something other than the endless loop in her mind.
Secondly, She will look forward to a meal, and maybe derive some pleasure from it.
Thirdly, Hopefully she will make notes what she thought, or the date and time so I can see what she chooses first and what she leaves.
Just one little bowl from your pot.

Spenót árpa leves. Spinach barley soup
This spinach soup is not as green or metallic as you might think. It’s super comforting in fact. It’s one of my first choices for my Monday Menu for Mom. I need to be visiting her weekly from now on as she is aging and needs more assistance. She can’t cook for herself anymore, so…
Meals for my 94 year old Mother. AKA Nana
She is 94 years old in 2025. Will be 95 at the end of the year. She was and is a lot of things. Primarily, willful, stubborn, manipulative and can be very charming when she is conspiring something. She is Hungarian. She is my Mother. Just the two of us left of our small refugee family…
Lentil Soup
Lentils are a great simple protein meal and easy to make. Lentil soup was one of my Mothers favorites. “Lencse leves”, she called it. It’s a basic traditional recipe. The Hungarian twist of added paprika and roux to thicken the broth. It’s a little richer than the basic version. Some of my creations in working…
Pasta Faglioli Soup
My take on Pasta Fagioli soup. There are as many versions as there are cooks. My Hungarian cooking is extremely similar to northern Italian cooking, so it’s not much of a stretch. I had already worked out the recipe in my head, then cross referenced Lidia and Marcella just to be sure I hadn’t missed…
The Best Chicken Soup: A Culinary Memory
My mother made the best chicken soup. It was a very special meal, a rare occurrence, because we had to catch, kill, scald, defeather, and burn the fuzz off that unlucky bird before it even made it into the kitchen. We were a family of four, and that pot of soup was a feast. After…
