Egg Salad Sandwich with roasted red peppers

I made some new traditional meals this week. Stuffed cabbage two ways; the Polish way with tomato, and the way my Mother made it with just a little roux thickening the broth.
Two different white bean stew/soups. Three different creamed noodle dishes, one with spinach and with mushrooms. and orzo with chicken and mushrooms. It’s quite simple to vary noodle dishes once the pasta is cooked and the cream base is made. My mother made egg salad with onion and butter. Sometimes with a little paprika sprinkled on it as well. I decided to try that recipe with super soft brioche and Japanese milk bread to see if she could chew it.

She said she couldn’t eat it because she has no teeth, but I defrosted it to have her try it to see for myself. If she could eat bananas and Danish pastry, she should be able to handle this super soft sandwich.

I had added chopped up fire roasted red peppers on the side, for some wetness and flavor. She ate it easily, but said it needs sugar. A lot of sugar. But that’s her. Not recommended for anyone else.

So in between answering every spam call that comes in, and they’re constant, I got the answer to my question after a few interruptions. It would have been more successful if she didn’t talk while she was eating though.
