I don’t think a Hungarian could live without Kolbasz. The soft, smoke cured, heavily seasoned with paprika, links of sausage originally created in the town of Gyula. Gyulai Kolbasz is the national sausage I think. I know it was what my refugee parents missed as I was growing up. After we settled down and had…

Mushroom Paprikas’ with buttered parsley rice
Trying to find the balance between taking too much and too little. I had made enough to cover lunch and dinner, so not all of it was eaten. I have to work on labeling and packaging, I’m getting there. Labels either don’t stick or stick too well and I can’t get them off the containers….

I had already worked out the recipe in my head, then cross referenced Lidia and Marcella just to be sure I hadn’t missed…
I was the only waitress working, and then..
I was working in what’s known in Chicagoland as a greasy spoon diner. The food was good quality and the owners and cooks cared. I was proud to serve everyone who came in. It was a small place, with about twenty booths, and a counter. From the kitchen back and center, the cooks could see…
Fish and Chips: A Culinary Love Letter
When I had a shilling to spend for food, I chose between pasties or fish and chips. The shops were almost next to each other. One was a bakery that made the pasties, the other a fish and chip shop. They were both across the street from my Nelson Central School. I love fish…
